Our Cheeses
By definition, Artisan Cheese is manufactured by hand using the traditional craftsmanship of skilled cheese makers.

This is the way we treat our cheese at Calico Farmstead, giving each batch special attention to get the best final product.

In our workroom we make the cheese in small batches, this gives us cheese that is more complex in taste and variety. Some are ripened and some are fresh with mild flavors.

Our artisan cheeses are also known as farmstead cheeses, made with milk from our own herd of cows.
Camembert: Mold ripened cheese.
Cheddar Chunks: Mild cheese, not pressed or aged.
Farmer's Cheese: A mild table cheese similar in taste to cottage cheese. Good on your favorite fresh fruit or vegetable, or as a casserole topping.
Feta: This cheese has a mild, salty flavor.
Cultured butter: Made from pasteurized cream with culture.
We allow it to clabber before churning like grandmother used to.

Mexican Cheeses
*Queso Fresco
Fresh white cheese, use on any Mexican dish or salad
*Ricotta (Requesón)
Made from whey and whole milk, great for lasagna
